Weekly Meal Plan

Here's my meal plan for the week. I may try to blog some of my meals this week.

Breakfast: chocolate peanut butter smoothie, chocolate protein shake, protein bar, eggs

Lunch: salad, sandwich, soup, leftovers

Dinner
Sunday-Mirko for Gabe's birthday with my parents
Monday-beef stroganoff (Gabe's pick got his birthday dinner)
Tuesday-taco bake
Wednesday-baked chicken
Thursday-rice and beans
Friday-Flatout pizza
Saturday-leftovers or go out

Valentine's Day

Yesterday was the holiday of love. We decided to celebrate this past Sunday when Liberty was witha friend. We went out to dinner and a movie, Warm Bodies. I'll write a review of the movie later.

Yesterday we had a special dinner. We grilled steaks, sauteed mushrooms, and mashed cauliflower. It was so good. We enjoyed the evening as a family. Valentine's Day is different when you have a child. It is now longer about just the two of us. We celebrate the love of our family. We celebrate the fact that we love each other and are always here for each other. Our love is every day, not just on Valentine's Day.

Easy Chicken Fried Rice

We love Chicken Fried Rice. I've made it using leftover rice, but now I've found a way to cheat...Steamefresh Rice. I like to use their brown rice and frozen veggies, but the last time I was at the store they were out so tonight I had to use white rice with veggies. I used two packages. It turned out well.


First I scramble an egg.


I also cook two cubed chicken breasts in 1 tablespoon of butter in the wok. Remove the cooked chicken from the wok.


I use Teriyaki sauce and low sodium soy sauce.


I cook the steamfresh rice in the microwave for two minutes so it's not frozen. I then put it in the wok with two tablespoons of butter. I add the Teriyaki sauce and soy sauce and cook together for about 4 minutes until it's well mixed like below.



Then I add the egg and chicken back into the wok and cook for another 2 minutes.


It's a quick and easy way to have fried rice without having to have extra rice on hand. The Steamfresh rice and veggies are very good. I've also used their brown rice to make red beans and rice.

Another Busy Weekend

Saturday my in-laws came over to celebrate hubby's birthday. We went to Mellow Mushroom for lunch. Then came home and showed the brother-in-law  Rock Band.  The guys played for a bit then it was time for Liberty's last basketball game.  I'm glad cheer leading is over.  It was nice, but the games were in the middle of the day which made it hard.

Sunday we went to Sunday school then headed down to Foley.  We took Lib to my parents and mom made Gabe's favorite, lasagna.  Then we went to Distinctive Kitchens at The Wharf .  On the way home we stopped in Fairhope to see my best friend and her hubby.  It was great to visit with them for a while.  Then we came home to an empty house. ;)  Later in the evening Kris came over and we played Rock Band 2.

Today was the first day at work of Mardi Gras week. Since yesterday was Joe Cain Day there were some hung over folks.  It made for an interesting day.  Then I went by the grocery store on the way home.  Gabe came home and we met Kris and Sean at Buffalo Wild Wings.  Now I'm just relaxing while the guys are playing Rock Band.  It's interessting to watch.  Sean is really good at singing.  I will definitely just sit back and watch tonight.

Can You Say.....Weekend!!!!

I'm so glad the work week is over. It was a busy one. I've learned a lot at the new job. I'm ready for next week to get here though. On Thursday we leave for a cruise with my Mardi Gras society. My best friend will also be with us. I'm looking forward to spending some quality time with her. We're cruising the Gulf and going down to Mexico. Gabe and I have never been out of the country so we're both excited. We haven't been on a trip just the two of us since our honeymoon. I'm getting ready to go pick up our tickets then meeting Gabe, Liberty, and friends for the newest restaurant in Mobile -- Texas Roadhouse. Gotta love a good steak.

I ate lunch with Liberty today. School pizza was always one of my favorites, even as a teacher. The cafeteria was crazy. It's one of those things I don't miss now that I have a office job. :^)

We have soccer in the morning. Should be fun. I'm going to get with Gabe about the video. He can make it a combo of both games.
